Firstly, you can gather player feedback during early development and playtesting using web forms or even social chat apps. For example, many studios tend to have a discord channel where players can post a feedback for the game. Then the developers can review this and potentially add it to the development plan. One of my personal favorites would be using Jira Forms, which allows the feedback to directly form a Jira ticket for the development team to review and work on if approved. Having that said, using a solution such as Jira in the above case, also helps reviewing, prioritizing and implementing the changes into the development plans. Last but not least, there are many different project tracking solutions out there a team can use, so this can very much differ between different teams.
