The best way to check how users are interacting with your Website is by using Heatmaps. 

Use a free tool - Mircosoft Clarity, to check the user interaction, clicks, dead links, scroll depth etc. You can also watch recording of the interactions which will give you better understanding of where, what and how to improve the contents on the website.

We use heatmaps on a website to check where and how the users are interacting, how much time they are spending on a specific page or product, are they moving to call to action, if not why they are bouncing back our out of website etc 

Further this useful data analytics helps us to re-design a specific page, product offer or content of website so user stay engaged, spend more time on that particular page and take action.
